In the whole of Central Europe, you won’t find a restaurant that so elegantly combines innovation and culinary tradition, revisiting the latter with originality while using local produce. Added to this is fifteen years’ experience, during which time La Dégustation has been able to work without the slightest compromise when it comes to the quality of its ingredients, the preparation of its dishes and its service. The soul of the restaurant is Oldřich Sahajdák, an enthusiast who spends his time tirelessly trawling through old cookery books, looking for interesting suppliers and chiselling out a sophisticated gourmet menu: for example, he combines snails from the Lusatian Mountains with the scent of fennel and leek, he emphasises the intense flavour of venison with prunes and plum brandy, and he perfumes pork belly with rosemary. The three- or five-course menu varies according to the season, and the sommelier will help you pair it with the best vintages from local vineyards or, of course, non-alcoholic drinks.
